As its so lean there is little shrinkage during cooking, and small portions are quite filling which makes it economical too.
When buying venison it must be remembered that in Britain we have six species of deer in the wild and therefore it is possible when you purchase your venison it could be from any one of the three species we have in Lincolnshire, all of which have completely different characteristics.
Always ask your local outlet which species he is offering for sale, and when you've decided on the species you prefer, always ask for it by name as their visual appearance can be quite similar.
Cooking Times
All cooking times are for medium cooked venison.
Pan-frying: Cook 1.5-2cm thick cuts over high heat for about one minute each side.
Sautéing and Stir-frying: Toss over high heat for 30-40 seconds until just seared.
Roasting: In hot oven allow three minutes cooking time per cm thickness.
Grilling and Barbecuing: To cook 1.5-2cm thick cuts. Allow for two minutes per side.
