Rabbit Kebabs - Serves 2-4

 A useful variation for a barbecue, but it can be grilled or cooked in the oven if rain stops play.

Ingredients

1-2 rabbits
8-10 rashers streaky bacon, de-rinded

Vinaigrette Salad Dressing
4 tablespoons (60ml) olive oil
1 tablespoon (15ml) wine vinegar
2 teaspoons mild Dijon mustard
2 teaspoons sugar
Salt and pepper

Method

Remove the meat from the rabbits, cut it into chunks and marinate in the salad dressing for 3 hours or more. When your barbecue is hot, roll each piece of rabbit in ½ a bacon rasher and stick on a skewer. Cook for 15-20 minutes turning occasionally. To grill, place under a high heat, turning and basting once or twice until tender. If cooking in the oven preheat to 400F/Gas Mark 6/200C and cook for 30 minutes.

Serve with baked potatoes and a watercress salad.
